Zucchini Brownies
by Janet Fassett of Geneseo, IL

4 eggs
1 tsp vanilla
1 1/2 C oil
3 C zucchini – grated
2 C sugar
4 TBS cocoa
2 C flour
2 tsp soda
2 tsp salt

Beat first 3 ingredients for 2 min. Add dry ingredients, mix well.
Add vanilla and zucchini (Nuts are optional).
Bake in 15 X 10 greased pan @ 350 for 20 – 25 minutes.

Frosting
3 oz cream cheese
1/2 C butter
2TBS cocoa
2 C powdered sugar
Beat well and spread over the cooled brownies

Corn Dip
by Julia Thee of Donahue, IA

1/2 C mayo
1 C shredded cheddar cheese
1 – 11oz can Mexican corn (drained)
1/2 C sour cream
3 green onions finely chopped
Cumin powder to taste – start with a sprinkle, then add more if
desired

Mix and refrigerate. Serve with various crackers or chips.

Cucumber Salad

3 large cucumbers, peeled and sliced
1 TBS salt
1 onion, sliced thin
1/2 C sour cream
1/2 C mayo
2 TBS vinegar
1/2 tsp pepper
1/2 tsp chives, chopped

Place cucumbers in a bowl, sprinkle with salt, let stand 1 hour.
Drain. Stir n remaining ingredients. Chill at least 1 hour

Brownie Candy Squares

1 box Duncan Hines Brownie mix
( prepare as for fudge brownies)
3 large (4.25 oz each) Hershey’s Symphony bars with almonds and toffee chips

Pour 1/2 brownie batter into 9 X 12 pan. Arrange the 3 candy bars across the width of the pan. Pour the remaining batter evenly over the top. Bake as directed on the box. When luke warm, cut into squares.
