Kaylie & Jordyn’s Kitchen
In celebration of Grandparents Day, Eloise’s grandaughters, Kaylie and Jordyn have compiled a collection of kid-friendly recipes perfect for fun in the kitchen with your grandchild!
“Go Fly a Kite” Cupcakes
Ingredients:
1 2/3 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cup granulated sugar
1/4 cup firmly packed light brown sugar
1/2 cup vegetable shortening
1 cup buttermilk
3 large eggs
2 tablespoons vegetable oil
3/4 teaspoon vanilla extract
1/2 cups “M&M’s” Chocolate Baked Mini Bites, divided
24 graham cracker squares
1 container (16 oz.) White frosting
Assorted Food Colorings
Directions:
Preheat 350 degrees Fahrenheit. Lightly grease 24 (2 3/4 inches) muffin cups or line with foil or paper liners; set aside. In large bowl combine flour, cocoa powder, baking powder, baking soda and salt; stir in sugars. Beat in shortening until well combined. Beat in buttermilk, eggs, oil and vanilla. Divide batter among prepared muffin cups. Sprinkle one teaspoon “M&M’s” over batter in each muffin cup. Bake 20-25 minutes. Cool completely. Using serrated knife and back and forth saw motion, gently cut each graham cracker into kite shapes. Reserve 1 cup frosting. Tint remaining desired color. Frost graham crackers and decorate with “M&M’s”. Tint reserved frosting sky blue; frost cupcakes. Place small blob of frosting at one edge of cupcakes; stand kite in frosting on cupcakes. Make kite tails with “M&M’s”. Store in tightly covered container(s).

Mini Mexican Burger Bites
Ingredients:
1/2 lbs. Ground Beef
1/2 cup finely chopped red,
yellow or green bell peppers
(optional, but add to flavor)
2 tablespoons French’s
Worcestershire Sauce
1 teaspoon Frank’s Red Hot Sauce
1 teaspoon dried Oregano leaves
1/4 teaspoon salt
12 mini dinner rolls
Shredded Cheddar Cheese
Directions:
Slice hot dogs into bite size pieces; set aside. In large saucepan, cook pasta according to the package directions; drain and return to saucepan. Stir in hot dogs, cheese, peas, and milk. Cook over
medium heat 10 minutes or until cheese is melted, stirring
occasionally. Prep time: 10 minutes Cook time: 20 minutes.

Chocolate Peanut Butter Cups
Ingredients:
1 package Swiss chocolate cake mix
(Duncan Hines)
1 container vanilla frosting
(Duncan Hines)
1/2 cup creamy peanut butter
15 miniature peanut butter cup
candies, wrappers removed,
cut in half vertically
Directions:
Preheat over to 350 degrees Fahrenheit. Place 30 (2-1/2 inch) paper liners in muffin cups. Prepare, bake and cool cupcakes following the package directions for the basic recipe. Combine vanilla frosting and peanut butter in a medium bowl. Stir until smooth. Frost one
cupcake. Decorate with peanut butter cup candy, cut side down.
Repeat the remaining cupcakes. Makes 30 servings.

Grilled Cheese & Turkey Shapes
Ingredients:
8 slices bread of your choice
8 teaspoons ketchup or mustard
for decoration
8 slices deli roast turkey
4 slices of American cheese
2 tablespoons bur of margarine,
softened
Directions:
Spread one teaspoon mustard (if desired) on each slice of bread. Arrange turkey and cheese on 4 slices of bread, dividing evenly. Cover with top halves of bread. Cut out sandwiches using desired cookie cutters. Place cookie cutter on top of sandwich; press down firmly. Remove excess trimmings. Spread butter on both sides of bread. Heat large non-stick skillet over medium heat. Cook sandwiches one minute per side or until bread is golden brown and cheese melts. Decorate with mustard or ketchup (if desired).

Hot Dog Macaroni
Ingredients:
1 package (8 oz.) hotdogs
1 cup uncooked corkscrew pasta
1 cup shredded cheese
1 box (10 oz.) BIRDS EYE
frozen green peas
1 cup 1% milk
Directions:
Slice hot dogs into bite size pieces; set aside. In large saucepan, cook pasta according to the package directions; drain and return to saucepan. Stir in hot dogs, cheese, peas, and milk. Cook over medium heat 10 minutes or until cheese is melted, stirring occasionally. Prep time: 10 minutes Cook time: 20 minutes.

Pizza Rollers
Ingredients:
1 package (10 oz.) refrigerated
pizza dough
1/2 cup pizza sauce
18 slices turkey pepperoni
6 sticks mozzarella cheese
Directions:
Preheat over to 425 degrees Fahrenheit.
Coat baking sheet with non-stick
cooking spray. Roll our pizza dough
on baking sheet to from 12 by 9 inch rectangle. Cut pizza dough into 6 (4 1/2 x 4 inch) rectangles. Spread about 1 tablespoon sauce over center third of each rectangle. Top with 3 slices of pepperoni and a stick of mozzarella cheese. Bring end of dough together over cheese, pinching to seal. Place seam, side down, on the prepared baking sheet. Bake in center of oven ten minutes or until golden brown.
