Ella’s Kitchen

It is December, and nothing says lovin’ like something from the oven! Whether it is a roast turkey, meatloaf, cookies or
casserole, those aromas fill the house and make everyone feel good.

Breakfast Pizza

One container Crescent rolls
1/4 to 1/2 crumbled or
chopped breakfast meat
(ham, precooked sausage,
crisp bacon – or for a hearty
meat lovers, use all three)
4 eggs, beaten 2 Tbs milk
2 C shredded cheese garnish of your choice

Open crescent rolls and unroll, laying flat on a 9 X 13
shallow greased baking dish. Pinch seams together to make the base for the pizza. Sprinkle the breakfast meat on the crust. Stir in milk to beaten eggs. Slowly pour over the meat and crust. Bake at 350° for about 30 minutes. Sprinkle cheese over top and return to oven to melt.
Variations:
• Spread a thin layer of salsa or pizza sauce on crust before adding meat.
• Put a layer of frozen hash browns on crust before the meat. If you do this, add 10 to 15 minutes more of cooking time.
• Add red and green pepper pieces in with the shredded cheese for a Christmas color twist.
Serves 8 – 12 depending on size of piece.

Lunchtime open-faced sandwiches

6 Slices bread buttered on one side
6 slices lunch meat regular thickness or 18 to 24 slices deli cut meat
6 Large slices of tomatoes
6 slices of your favorite cheese (Swiss, cheddar, pepper-jack, whatever you like)
Mustard, mayo or sandwich spread.

Place bread buttered side down on baking sheet. Spread sandwich spread, mayo or what ever you want lightly on the top side of bread. Place meat on bread, layer on tomato then cover with cheese. Bake in 325° oven about 8 – 10 minutes until cheese melts. Will serve 6.

Oven Fries

Thinly slice two large white potatoes. Toss lightly with olive oil and seasonings. I vary the seasoning depending on what else I am serving or what my mood is. Always cracked black pepper and a little garlic. Another favorite is parsley, but I have used oregano, rosemary/garlic, Supreme salad seasoning, or tarragon and thyme. I tried curry one time, but didn’t really care for that seasoning with potatoes. But maybe you would, so experiment. Place potatoes in shallow baking dish or cookie sheet that has sides. Bake at 375° for 20 minutes or until potatoes are tender. Will serve 4 – 6.
