Ella’s Kitchen

Nothing like the aroma of apples cooking to warm the entire house on a chilly November day! There is just something about cinnamon and apple smells to make you feel warmer even if the temperature doesn’t increase!… There is nothing like homemade condiments to add pizzazz to any meal.  – Ella

Peach Salsa

6 large peaches, peeled, pitted and chopped (frozen peaches may be used)
2/3 Cup orange marmalade
3 Tablespoons cider vinegar
1 Tablespoon sugar
1/4 Cup diced Bermuda onion
1 Tablespoon crystallized ginger (I have found this at Schnuck’s under the Spice Islands brand)
2 Tablespoons chopped parsley or cilantro (optional)


In medium bowl, mix all ingredients together. Cover and refrigerate until serving. Has a refrigerated shelf life of
4 to 5 days.

Apple-Fritter-cake

Apple Fritter Cake

For the batter:
3 cups of flour
1/4 tsp. salt
1 cup of sugar
4 tsp. baking powder
1 1/2 cup milk
2 eggs
2 tsp. vanilla
1/2 cup butter, melted
6 small apples cored, peeled and diced
For the topping:
1 cup of butter, softened
1 cup of brown sugar
2 tbsp. flour
1 tbsp. cinnamon


Start by mixing all the ingredients for the batter (except the butter) together in a bowl. Once combined, carefully pour in the melted butter. If you do this part with your mixer at a high speed it will splash everywhere. So slow is best. Pour the batter into a greased 9×13 pan, any smaller and it will overflow while baking. Evenly distribute the apples over the top of the batter. In a separate bowl mix together the topping, it will be thick so do your best to drop scoops of it evenly over the apples. Then take a knife and drag it in a swirly motion all over the pan.

Bake at 350 degrees for at least 40 minutes. Depending on how many apples you put in and how juicy they were you may need to increase your time. If the top is getting too brown you can always tent it with foil.

Once baked let sit for 20 minutes and then pour the glaze all over the cake.

Cranberry-Apple Bake

3 Granny Smith apples – cored and cut into 1 inch pieces (about 4 cups)
2 cups whole cranberries – fresh or frozen
3/4 cup sugar
1 1/2 cups old-fashioned oats
1/4 cup packed light brown sugar
1/3 cup all-porpose flour
1/2 cup chopped pecans or almonds (optional)
1/2 cup (1 stick) butter, melted


Heat oven to 350 degrees. Butter a 2-qt baking dish.
In a large bowl, mix apples, cranberries and white sugar. Spoon into baking dish.
Mix together the oats, brown sugar, flour and nuts. Stir in melted butter.
Sprinkle the oatmeal mixture over the top of the apple mixture.
Bake at 350 degrees for 45 minutes or until apples are tender. May serve warm or cool. Add a scoop of ice cream or garnish with whipped cream, if you desire.

Autumn Apple Cake

5-7 apples, cored and sliced thin (peel if you want but not necessary)
1 (9 ounce) package yellow cake mix
2 tablespoons sugar
1 tablespoon ground cinnamon
1 stick real butter (if it seems to dry, you can add another 1/2 stick)


Preheat oven to 350°
Fill your 9×12 pan 1/2 full with apples.
Sprinkle the apples with dry cake mix
Combine sugar and cinnamon and sprinkle over the cake mix
Melt butter and drizzle over
Bake for 30 minutes or until golden brown
Can be served with ice cream, if desired…

Corn Relish

Drain one 12-ounce can, whole kernel corn; add 1/4 cup pickle relish (I use a combination of dill relish and sweet relish), 2 table spoons chopped green pepper, one tablespoon minced onion, one tablespoon chopped pimento, dash sea salt, 2 tablespoons clear French dressing. Chill. Enjoy.
