Congratulations to Mary Hehlke of Camanche, Iowa. She is our SUMMER SALAD contest winner. Please enjoy her two delicious salad recipes below.
German Potato Salad
- 1 cup bacon, diced
- 1 cup celery, sliced
- 1 cup onion, chopped
- salt
- 3 Tbsp. flour
- 2/3 cup sugar
- 2/3 cup vinegar
- 1/2 tsp. pepper
- 1 1/3 cups water
- 8 cups cooked, sliced potatoes (red is the best)
Directions:
- Fry and drain first four ingredients, leave 4 T fat in the pan.
- Add sugar, vinegar, water and pepper.
- Cook, then spread the flour over the potatoes. Pour mixture over the potatoes.
- Bake the potato slices in the oven for 350 degrees or put in a crockpot and heat until ready to eat.
Orange Tapioca Salad
- 1 small pkg orange jello
- 2 boxes (3 oz) tapioca pudding
- 3 c of liquid
- 1 can of crushed pineapple
- 1 can mandarin oranges
- 8 oz cool whip
Directions:
- Use juice from canned fruit and the rest water, enough to make the 3 cups of liquid.
- Cook until thick.
- Cool completely, add fruit and cool whip.
- 1 cup of mini marshmallows, if desired.
