Skillet Chicken and Vegetables

  • 1 lb skinless, boneless chicken breast, cut into 1-inch pieces
  • 2 zucchini, sliced
  • 2 red bell peppers, chopped into chunks
  • 1 broccoli crown, broken into florets
  • 1/2 onion, sliced
  • 1/4 teaspoon salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1/4 cup low-sodium chicken broth
  • 1 tablespoon fresh chopped parsley, for garnish
  • 1/2 teaspoon red chili pepper flakes, optional

 

Directions:

  1. Cut the chicken breast into small 1/2-inch cubes, then season chicken bites with salt and pepper, olive oil, and Cajun seasoning. Sautee the chicken bites for 5–7 minutes until cooked and browned.
  2. Cook the vegetables: In the same skillet, stir-fry the onion, then add the rest of the vegetables.
  3. Deglaze the pan with chicken stock, then add the cooked chicken bites back into the skillet and mix with the veggies to combine.

Sliders

  • 2 Tsbp. cooking spray
  • 2 Tbsp. extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • 1 tsp. yellow mustard
  • 1 Tbsp. Worcestershire sauce
  • Kosher salt
  • 1 tsp. freshly ground black pepper
  • 12 slider buns (or dinner rolls)
  • 12 slices cheddar cheese
  • 1/4 cup mayo
  • 3 Tbsp. butter, melted
  • 1/4 tsp. garlic powder

 

Directions:

  1. Preheat oven to 350 degrees F. Butter the bottom of a rimmed baking sheet.
  2. Place a large skillet over medium/high heat with olive oil. Add ground beef and break up with a spatula. Season with salt, pepper, yellow mustard and garlic powder. Sautee over medium/high heat, breaking up the beef and cook just until cooked through, then remove from heat.
  3. Tilt skillet to spoon off and discard excess fat. Stir 1/4 cup mayo into the ground beef.
  4. Cut buns in half. Place bottom half of dinner rolls on buttered baking sheet and line bread with sliced cheese. Spread ground beef mixture evenly over the sliced cheese, using the back of a spatula to square off the edges.
  5. Place the top of buns, cut side down, over the burgers. Brush tops with 2 Tbsp. melted butter and immediately sprinkle tops with sesame seeds. Bake at 350 degrees F for 12–15 minutes, or until cheese is melted and tops are golden brown.
